Brownie Bummer

Yeah, that's not what a pan of freshly baked brownies should look like. So, here was the bummer. I pulled this awesome batch of brownies out of the oven and...promptly dropped the pan on the floor. Upside down. Serious bummer. It's especially a bummer here in Mexico where semi-sweet and bittersweet baking chocolate are notoriously difficult to find. And I made these brownies with my coveted virgin coconut oil, which is also difficult to find here (although I've read that coconut oil can be found in some pharmacies).

Here are the awesome brownies piled up on the floor. The sight of it nearly makes me cry.

Luckily I had a bit of batter left and managed to make almost a whole second batch of brownies. Those are still in the oven. Brynn says, "Mom. This time, take it out with TWO hands!" She is a wise girl, I tell you.

If you're thinking of coming to visit, feel free to bring a bag or two of Ghirardelli 60% Cacao Bittersweet Chocolate Chips. :) It's the best widely-available, reasonably-priced chocolate we've found in the States and it is definitely not available here.

ooh, ouch. wow, brownies with coconut oil? sounds awesome! Love reading about your adventures - thanks! We just drove up Pikes Peak and are enjoying time with my brother in town... school starts Tuesday - KG here we come!

hey, could you send me that recipe? I have ones with cocoa and coconut oil, but not ones with chocolate, and I happen to have some of that 60% chocolate in my pantry waiting to be used :) Hope your next batch turns out great!
